Mock Turtle Soup

Ingredients

  • 1 to 1 1/2 lb. ground beef
  • 3 1/2 qt. water
  • 1 qt. tomato juice
  • 14 oz. catsup
  • 1 1/2 Tbsp. pickling spices
  • 3 Tbsp. lemon juice
  • 1 tsp. celery seed
  • 6 to 7 dashes Worcestershire sauce
  • 2 to 3 beef bouillon cubes
  • 3/4 c. flour
  • 2 to 3 hard-boiled eggs

Directions

    Add all ingredients, except flour and eggs, and simmer over low heat for 1 1/2 hours.

    Brown the flour.

    Make a paste of the flour and an additional 2 to 3 cups of hot water in a blender. Add to the soup.

    Chop the hard-boiled eggs and add to soup. Simmer an additional 1 hour.
