- 1 c. cornmeal
- 1 c. milk
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 3 Tbsp. shortening
Directions

1Mix cornmeal, salt and baking powder. Add milk and egg.

2Mix well.

3Melt shortening in iron skillet. Coat sides of skillet and pour excess into batter.

4Mix well.

5Sprinkle flour into bottom of skillet. Add batter.

6Bake in a 425° oven for 25 to 30 minutes. Makes a 5-inch skillet.

7(Double for a 9 or 10-inch skillet.)
