Mom's Pink Beans Recipe

Ingredients

  • 1 pound pink beans (can use pintos)
  • 1/2 pound minced bacon or possibly ham hocks
  • 1 lg. onion, minced sm.
  • Salt & pepper to taste
  • 1 lid of Granma's Spanish Pepper
  • Dash cumin pepper
  • 2 or possibly 3 toes of garlic, minced
  • 1/2 bell pepper, minced
  • 1 can tomato sauce
  • 1 tbsp. parsley flakes
  • 1/2 teaspoon oregano

Directions

    Soak beans overnight with no salt.

    Next day, drain water.

    Add in new water to beans sufficient to cover them.

    Cook slowly till tender.

    Add in all the ingredients to beans and simmer till tender.

    Serve with French bread.
