Mom'S Special Quick Quiche

Ingredients
- 12 slices crispy cooked bacon, crumbled
- 1/2 c. shredded Cheddar cheese (low-fat)
- 1/2 c. shredded Swiss cheese (low-fat)
- 1/3 c. finely chopped onion
- 1 small can mushrooms, drained
- 2 c. milk (2% or skim)
- 1 c. Bisquick baking mix (low-cholesterol)
- 4 eggs or egg substitute
- salt and pepper to taste
- Parmesan cheese
Directions

1Heat oven to 400°.

2Lightly spray a 9 or 10-inch pie plate or quiche pan with Pam.

3Sprinkle cheese, bacon, mushrooms and onion evenly over bottom of pan.

4Mix Bisquick, milk, eggs, salt and pepper in blender or food processor.

5Pour mixture over ingredients already in pan.

6Bake about 30 to 35 minutes, until golden brown.

7Sprinkle with Parmesan cheese while hot.

8Let stand 5 minutes before cutting.

9Great for breakfast or brunch! Refrigerate leftovers.
