  • 1 loaf Italian bread (bakery)
  • 1 pan of corn bread
  • 1/2 loaf of wheat sandwich bread
  • 16 ounces sage breakfast sausage
  • 2 onions
  • 1 cup chopped celery
  • 2 medium hard apples (Granny Smith)
  • 3/4 cup dried cranberries
  • 1/2 cup butter
  • 2 eggs
  • 1 cup chicken/turkey stock
  • sage, thyme (preferably fresh)
  • salt and pepper

Directions

    Break up breads into a large bowl or pot.

    Saute onions and celery in butter.

    Add chopped sage and thyme to vegetables.

    Add vegetables to breads.

    Brown sausage in same pan.

    Drain sausage and once cooled add to mixture.

    Mix two beaten eggs and chicken stock in a measuring cup and add to mixture.

    Chop apples and add them and cranberries to mixture.

    Season with salt and pepper.

    Stuff turkey cavity with some of the stuffing. Place remainder in a large buttered baking dish.

    Cook stuffing covered for 30 minutes and uncovered for 15 so top will be crunchy.
