Ingredients

  • 1 lb. lean flank or sirloin steak, thinly sliced across grain and cut into 1/2-inch long strips
  • 2 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 1 Tbsp. dry sherry
  • 1/2 tsp. dried pepper flakes
  • 3 Tbsp. peanut oil
  • 1 Tbsp. sesame oil
  • 1/2 tsp. chopped garlic
  • 1 bunch green onions, each cut in 1/2 lengthwise, then cut diagonally in 1-inch long pieces

Directions

    Put meat strips in bowl; add 1 tablespoon soy sauce, next 3 ingredients and 2 tablespoons oil.

    Set aside.

    Mix remaining 1 tablespoon soy sauce with sesame oil; set aside.

    Heat remaining 1 tablespoon oil in uncovered wok at 400°.

    Add garlic; stir-fry 10 seconds.

    Add beef; stir-fry 2 minutes.

    Add onion and sesame oil mixture; stir-fry until heated through, 1 to 2 minutes.

    Serve immediately, over hot cooked rice.
