Morning Glory Eggs

Ingredients

  • 1 lb. sausage, browned and drained or 1 lb. bacon, cooked crisp and crumbled
  • 1 doz. eggs, soft scrambled in 1 Tbsp. butter or margarine
  • 1 c. sour cream
  • 4 oz. each sharp or mild Cheddar and either Mozzarella, Monterey Jack or Swiss cheese, grated

Directions

    Grease a 9 x 13-inch casserole.

    Stir sour cream into eggs, then pour into prepared dish.

    Sprinkle sausage or bacon over eggs, then cheeses.

    Cover and refrigerate overnight, if desired. Bake, uncovered, at 350° until heated through and bubbly and cheeses are melted, about 30 to 45 minutes.

    Serve with salsa, garlic cheese grits, angel biscuits and fresh fruit.
