- 14 cup butter, softened
- 12 cup packed brown sugar
- 2 eggs
- 1 cup sour cream
- 1 cup shredded carrot
- 12 cup flaked coconut
- 12 cup raisins
- 1 12 cups flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 12 cup chopped nuts
Directions

1In a small mixing bowl, cream butter and brown sugar.

2Add eggs and sour cream; beat well.

3Stir in the carrots, coconut and raisins.

4Combine the flour, baking soda and cinnamon; stir into creamed mixture just until moistened.

5Fold in nuts.

6Fill greased or paper-line muffin cups three-fourths full.

7Bake at 375 for 20-25 minutes or until a toothpick comes out clean.

8Cool for 5 minutes before removing from pan to wire rack.

9Serve warm.
