Ingredients

  • 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1 clove garlic, crushed
  • 2 teaspoons cumin
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamon
  • 5 cups boiling water
  • 440g can crushed tomatoes King Sooper's 1 lb For $0.99 thru 02/09
  • 1/2 cup tomato paste
  • 2 teaspoons VEGEMITE
  • 1 large carrot, cut into 1cm cubes
  • 420g can chickpeas, drained
  • 200g green beans, cut into 2cm lengths
  • 2 tablespoons chopped coriander
  • salt and freshly ground black pepper, to taste

Directions

    Cook onion and garlic in a large bowl on HIGH (850W) for 2-3 minutes, add cumin, cinnamon and cardamom then cook a further 1-2 minutes or until fragrant.

    Add water, tomatoes, tomato paste, Vegemite* and carrot, cover then cook on HIGH (850W) for 10-12 minutes, stirring occasionally.

    Stir in chickpeas and green beans and cook on HIGH (850W) for a further 2-3 minutes or until vegetables are tender.

    Remove from microwave, stir through coriander and season with salt and pepper.
