  • 1 lb carrot
  • 1 12 tablespoons butter
  • 14 cup slivered almonds
  • 1 tablespoon sugar
  • 18 teaspoon ground coriander
  • 18 teaspoon cinnamon
  • 14 teaspoon cumin
  • 1 pinch cayenne
  • salt

Directions

    Slice carrots and cook in boiling salted water until tender - about 20 minutes.

    Drain.

    Melt butter, add almonds and cook over medium low heat, stirring, until a light golden color.

    Add carrots, sugar, coriander, cinnamon , cumin, cayenne and salt.

    Cook, stirring over low heat until most of the liquid has evaporated and carrots are shiny and glazed, about 3 - 5 minutes.
