- 1 lb carrot
- 1 12 tablespoons butter
- 14 cup slivered almonds
- 1 tablespoon sugar
- 18 teaspoon ground coriander
- 18 teaspoon cinnamon
- 14 teaspoon cumin
- 1 pinch cayenne
- salt
Directions

1Slice carrots and cook in boiling salted water until tender - about 20 minutes.

2Drain.

3Melt butter, add almonds and cook over medium low heat, stirring, until a light golden color.

4Add carrots, sugar, coriander, cinnamon , cumin, cayenne and salt.

5Cook, stirring over low heat until most of the liquid has evaporated and carrots are shiny and glazed, about 3 - 5 minutes.
