Mountain Spring Salad

Ingredients

  • spinach for 4, washed and dried
  • 3 scallions, including tops and bottoms
  • 2 tsp. sugar
  • salt to taste
  • 5 slices country cured bacon
  • 2 Tbsp. wine vinegar
  • croutons (optional)

Directions

    Toss spinach in salad bowl with scallions.

    Sprinkle on sugar and salt.

    Fry bacon until crisp; drain, but reserve oil.

    Crumble bacon coarsely over lettuce.

    Sprinkle on vinegar.

    Pour hot bacon grease over salad.

    Toss and serve immediately.

    Top with croutons. Serves 4.
