- 1 1/2 lb. ground beef
- 1 medium onion, minced
- 2 Tbsp. butter
- salt and pepper to taste
- 1 tsp. cinnamon
- 1 (8 oz.) can tomato paste
- 1 large eggplant, cut in chunks and salted (do not peel)
- 3/4 c. grated Swiss cheese
Directions

1Brown meat and onion in butter.

2Salt and pepper to taste. Add cinnamon.

3Dilute tomato paste with 2 cans of water and add to mixture.

4Simmer 15 to 20 minutes.

5Rinse and drain eggplant. Simmer in boiling water for 10 minutes; drain.

6Arrange eggplant slices in shallow casserole dish.

7Add meat sauce.

8Cover with grated cheese.
