- 1 lb. Mozzarella
- 3 small tomatoes
- 3/4 lb. zucchini
- 1/2 c. red onion, thinly sliced
- 6 Tbsp. olive oil
- 3 Tbsp. wine vinegar
- 1 tsp. salt
- 1/4 c. chopped fresh parsley
- 1/4 tsp. oregano
- black pepper
Directions

1Cut Mozzarella into thin strips.

2Slice tomatoes into thin wedges.

3Cut zucchini into 1/4-inch slices and drop in boiling water for 2 minutes; drain and cool under running water.

4Combine all ingredients and toss.

5Let chill for at least 1 hour before serving.
