- 1 c. butter (2 sticks)
- 2 1/2 c. cake flour
- 1 tsp. rum extract
- 1 tsp. baking powder
- 6 small or 5 large eggs, separated
- 1 3/4 c. sugar
- 1/2 tsp. salt
- 1/2 c. chopped nuts
Directions

1Cream butter and add sugar gradually.

2Beat at medium speed until well creamed (about 5 to 10 minutes).

3Add one egg yolk at a time, beating only until yolk is broken.

4Sift dry ingredients together and stir into batter along with rum extract.

5Beat egg whites until stiff and fold into cake mixture.

6Sprinkle 1/2 cup chopped nuts on bottom of a well-greased and floured tube pan, then pour in the cake batter.

7Bake at 350° for 75 minutes.
