Mushroom Muffins

  • 2 tsp. butter
  • 1 1/2 c. mushrooms, finely chopped or canned
  • 1 c. whole wheat flour
  • 1 Tbsp. brown sugar
  • 2 tsp. baking powder
  • 1/2 c. grated Cheddar cheese
  • 1 egg, beaten
  • 1 Tbsp. melted butter
  • 1/3 c. milk
  • pinch of salt

Directions

    Fry mushrooms lightly in 2 teaspoons of butter.

    Drain.

    Sift dry ingredients and mix in Cheddar cheese.

    In a bowl, mix together the beaten egg, melted butter, milk and mushrooms.

    Add dry ingredients to the liquid mixture.

    Pour into muffin pan and bake in oven for 20 to 25 minutes at 375°.

    Serve warm with salad or soup.
