Mushroom Pate

Ingredients

  • 4 Tbsp. butter
  • 1/2 c. scallions (white part only)
  • 1/4 tsp. thyme
  • 1 tsp. salt
  • 4 c. chopped mushrooms
  • 1/3 c. sherry
  • 8 oz. soft cream cheese
  • 1 c. toasted fine chopped walnuts
  • 1/4 c. fresh parsley
  • dash of Tabasco sauce

Directions

    Finely chop walnuts, then toast.

    Chop mushrooms and scallions.

    In heavy skillet, cook in butter the mushrooms, scallions and thyme for 5 to 8 minutes.

    Add salt and sherry. Cook until all liquid is gone.

    Cool.

    Fold in soft cream cheese. Add walnuts, parsley and Tabasco.

    Place in a dish and refrigerate.

    (Use 1/4 fresh chives to garnish, if desired.)
