Mushroom Pate

- 4 Tbsp. butter
- 1/2 c. scallions (white part only)
- 1/4 tsp. thyme
- 1 tsp. salt
- 4 c. chopped mushrooms
- 1/3 c. sherry
- 8 oz. soft cream cheese
- 1 c. toasted fine chopped walnuts
- 1/4 c. fresh parsley
- dash of Tabasco sauce
Directions

1Finely chop walnuts, then toast.

2Chop mushrooms and scallions.

3In heavy skillet, cook in butter the mushrooms, scallions and thyme for 5 to 8 minutes.

4Add salt and sherry. Cook until all liquid is gone.

5Cool.

6Fold in soft cream cheese. Add walnuts, parsley and Tabasco.

7Place in a dish and refrigerate.

8(Use 1/4 fresh chives to garnish, if desired.)
