Mushroom Rice Stuffing

  • 1/2 c. butter or margarine
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1/4 c. snipped fresh parsley
  • 4 c. cooked white rice
  • 4 c. cooked brown rice, cooked in turkey or chicken broth
  • 1 c. sliced mushrooms
  • 2 tsp. ground thyme
  • 1 1/2 tsp. salt
  • 1 tsp. ground or rubbed sage
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground nutmeg

Directions

    Melt butter in large pan.

    Add onion, celery and parsley. Cook over low heat until tender, stirring constantly.

    Add cooked rice, mushrooms and seasonings.

    Toss together lightly.

    Makes enough stuffing for a 12 to 15 pound turkey.
