  • 1/2 lb. mushrooms, finely chopped
  • 1/4 c. butter
  • 3 Tbsp. flour
  • 3/4 tsp. salt
  • 1 c. half and half coffee cream
  • 1 tsp. lemon juice
  • 2 tsp. finely chopped chives
  • 1/2 loaf white bread, with crusts removed
  • 1 box cornflake crumbs

Directions

    Saute mushrooms in butter for 5 minutes.

    Cool and add flour. Blend well and add salt.

    Stir in cream and blend.

    Cook until thick, stirring constantly.

    Add lemon juice and chives.

    Cool. Roll slices of bread flat and spread mixture on bread as for jelly roll.

    Freeze lightly, then cut into thirds.

    Dip in melted butter and crushed cornflake crumbs.

    Bake for 10 minutes at 400° until light brown.
