- 1/2 lb. mushrooms, finely chopped
- 1/4 c. butter
- 3 Tbsp. flour
- 3/4 tsp. salt
- 1 c. half and half coffee cream
- 1 tsp. lemon juice
- 2 tsp. finely chopped chives
- 1/2 loaf white bread, with crusts removed
- 1 box cornflake crumbs
Directions

1Saute mushrooms in butter for 5 minutes.

2Cool and add flour. Blend well and add salt.

3Stir in cream and blend.

4Cook until thick, stirring constantly.

5Add lemon juice and chives.

6Cool. Roll slices of bread flat and spread mixture on bread as for jelly roll.

7Freeze lightly, then cut into thirds.

8Dip in melted butter and crushed cornflake crumbs.

9Bake for 10 minutes at 400° until light brown.
