Mushroom Sauce

  • 2 Tbsp. butter
  • 1/2 small finely chopped onion
  • 1/2 lb. finely chopped mushrooms
  • 1 Tbsp. flour
  • 3/4 c. beef broth
  • 1/4 c. dry sherry
  • 1 Tbsp. finely chopped parsley
  • 1/4 c. sour cream
  • salt
  • pepper

Directions

    Melt the butter in the saucepan and saute onion over low heat for 5 minutes.

    Add the mushrooms.

    Cover and let steam for another 5 minutes.

    Stir in the flour and add the beef broth and sherry, stirring constantly.

    Season with salt and pepper.

    Simmer for 5 more minutes.

    Remove from the heat and stir in the sour cream and parsley.

    Serve with chicken.
