- 2 Tbsp. butter
- 1/2 small finely chopped onion
- 1/2 lb. finely chopped mushrooms
- 1 Tbsp. flour
- 3/4 c. beef broth
- 1/4 c. dry sherry
- 1 Tbsp. finely chopped parsley
- 1/4 c. sour cream
- salt
- pepper
Directions

1Melt the butter in the saucepan and saute onion over low heat for 5 minutes.

2Add the mushrooms.

3Cover and let steam for another 5 minutes.

4Stir in the flour and add the beef broth and sherry, stirring constantly.

5Season with salt and pepper.

6Simmer for 5 more minutes.

7Remove from the heat and stir in the sour cream and parsley.

8Serve with chicken.
