Ingredients
- 1 Tbsp. olive oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1/2 lb. thinly sliced mushrooms
- 3 Tbsp. lemon juice
- 1/2 tsp. dried tarragon
- 1/2 tsp. paprika
- 1 c. vegetable broth or water
- 1 Tbsp. tahini
- 1 tomato peeled, seeded and diced
- 8 oz. artichoke noodles cooked according to pkg. and drained
- 2 Tbsp. minced fresh parsley
Directions

1Saute onion and garlic in oil until soft.

2Add mushrooms and cook until they are soft.

3Add lemon, tarragon, paprika and mix well.

4Blend vegetable stock and tahini.

5Pour over mushroom mixture and mix well; remove from heat, add tomatoes and season, if necessary, with fresh ground pepper and some tamari.

6Spoon over noodles and garnish with parsley.
