- 6 medium potatoes
- 1 medium onion
- 6 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 c. stock or 2 bouillon cubes, dissolved in 1 1/2 c. water
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. prepared mustard
- 1/4 c. dry bread crumbs or cracker crumbs
Directions

1Peel, cube and boil potatoes until almost done.

2Place in large, greased baking dish.

3Chop onion fine.

4Melt butter in skillet; add onion and cook until it is limp.

5Stir in flour smoothly and gradually add stock or bouillon.

6Cook over low heat, stirring constantly, until it bubbles.

7Season with salt, pepper and mustard.

8Cook very slowly, about 10 minutes.
