Ingredients

  • 4 tbsps. each olive oil & butter
  • 1 ech - sm. onion, carrot, celery diced
  • 2 Idaho potatoes diced
  • 2 cloves garlic minced
  • 6 sprigs thyme leaves only
  • 1/2 cup flour
  • 4 cups veg. stock
  • 2 cups water
  • 1 cup heavy cream
  • 1 cup half & half
  • 5 cups frozen corn, thawed
  • salt & pepper to taste

Directions

    Heat oil & butter in 5 qt. pan. Add veggies, cook 5 min., then add potato and garlic, then flour. Cook a few minutes. Add stock & water. Bring to boil and simmer another 10-20 minutes. Add cream mixture and corn. Cook 10-20 minutes more. Add salt & pepper in layers and at end to taste.
