My Favorite Chicken Pie

Ingredients

  • 3 lb. fryer or 3 1/2 c. cooked chicken, diced
  • 1 (10 oz.) can creamed chicken (undiluted)
  • 1 (No. 10) can chicken broth (3/4 oz.) or may use broth from cooked chicken
  • 1/2 c. cooked peas, drained
  • 1/2 c. diced carrots, drained
  • salt and pepper (no salt if cooked chicken is salted)
  • 1 (11 oz.) pkg. pie crust mix

Directions

    Mix all ingredients, except pie crust.

    Mix pie crust according to directions on package.

    Roll out into 1-inch strips. Line 1 1/2-quart casserole dish with half of the pie crust strips. Pour chicken mixture into casserole dish.

    Top with remaining half of pie crust strips.

    Bake at 350° to 375° for 35 minutes or until crust is brown.

    Yields 6 to 8 servings.
