Ingredients

  • 1 1/2 lbs. tomatoes, chopped
  • 8 oz. mozzarella, cut in 1 X 1/1/2 strips
  • 3 Tbsp. extra virgin olive oil
  • 2 tsp. red wine vinegar
  • 1/2 c. fresh basil, chopped
  • 12 oz. penne pasta

Directions

    Mix tomatoes, mozzarella, oil and vinegar.

    Season with salt and pepper.

    Let stand about one hour at room temperature.

    Mix in basil.

    Cook pasta al dente.

    Drain and gently mix with tomatoes mixture.
