- 1 1/2 lbs. tomatoes, chopped
- 8 oz. mozzarella, cut in 1 X 1/1/2 strips
- 3 Tbsp. extra virgin olive oil
- 2 tsp. red wine vinegar
- 1/2 c. fresh basil, chopped
- 12 oz. penne pasta
Directions

1Mix tomatoes, mozzarella, oil and vinegar.

2Season with salt and pepper.

3Let stand about one hour at room temperature.

4Mix in basil.

5Cook pasta al dente.

6Drain and gently mix with tomatoes mixture.
