Navy Bean Soup

Ingredients

  • 1 lb. navy beans
  • 1 large onion, chopped
  • 2 to 3 carrots, sliced
  • 3 to 4 stalks celery, sliced
  • 1/4 c. green pepper, diced
  • 1 (8 oz.) can tomato sauce
  • 1/8 tsp. dry mustard
  • 2 cloves garlic, minced or 1/8 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1 ham bone with meat or dice a small piece ham
  • 1/4 tsp. baking soda

    Wash beans, cover with water and soak overnight.

    Drain and rinse.

    Place in 5 to 6-quart pot.

    Add water to 1 1/2 inches above beans.

    Add all other ingredients.

    Bring to boil; adjust burner to simmer.

    Add baking soda.

    Simmer for 1 1/2 to 2 hours. Remove 1 cup beans, drained.

    Mash and return to pot.
