Nectarine Cake

  • 3 None eggs
  • 1/2 cup milk
  • 1 1/2 cups granulated sugar
  • 2 1/2 cups self-rising flour
  • 1 tsp vanilla extract
  • 6 medium nectarines, peeled and sliced
  • 1/2 cup ground almonds
  • 3 tbsp unsalted butter, softened, diced
  • None None Powdered sugar, to dust

Directions

    Preheat the oven to 350°F. Grease a 9-inch springform pan; line bottom and sides with parchment paper.

    Process the eggs, milk, sugar, flour and vanilla in a food processor until a thick batter forms. Transfer the batter to a large bowl and fold in the nectarines.

    Spoon into the prepared pan. Sprinkle the top with almonds and dot with butter.

    Bake for 1 hour, or until toothpick inserted into center comes out clean. Cool completely in pan on a wire rack. Remove from pan. Dust with powdered sugar.
