- 6 -7 large ripe west virginia nectarines, pitted and sliced
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 egg
- 1 egg yolk
- 3/4 cup heavy cream
Directions

1Toss nectarines with sugar and flour.

2Place in 13 x 9 x 2 inch baking dish coated with non-stick cooking spray.

3Beat together egg and egg yolk; whisk into cream.

4Pour mixture over nectarines.

5Bake in preheated 425 degree oven for 10 minutes.

6Reduce oven temperature to 350 degrees and bake for 35 to 40 minutes.

7Remove from oven and cool.

8Serve warm or at room temperature.

9Garnish with fresh mint.

10Peaches can be substituted for nectarines (peach skin should be removed).
