  • 4 eggs, lightly beaten
  • 1 1/2 c. sugar
  • 2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 3 c. undiluted evaporated milk
  • 1 (29 oz.) can pumpkin
  • 1 tsp. salt
  • 2 tsp. ginger
  • dash of nutmeg
  • 2 (9-inch) unbaked pastry shells

Directions

    Mix eggs, sugar and pumpkin in large bowl.

    Slowly add milk and dry ingredients.

    Pour into pie crusts.

    Bake in preheated 425° oven for 15 minutes.

    Reduce heat to 350° and bake an additional 40 to 50 minutes or until knife comes out clean.

    Cool. Garnish, if desired, with whipped cream or Cool Whip.
