- 2 cans clams, drained
- 2 c. clam juice
- 8 oz. bacon, diced
- 2 Tbsp. butter
- 2 onions, diced
- 1/4 c. flour
- 6 potatoes, peeled and diced
- 1 1/2 tsp. thyme
- fresh ground pepper
- 2 c. milk
- 2 c. cream
- 3 Tbsp. parsley
Directions

1Cook bacon until crisp.

2Remove bacon.

3Add butter and onions. Saute 10 minutes.

4Add flour; cook 5 minutes more.

5Add clam juice, potatoes, thyme and pepper; simmer 15 minutes.

6Add clams. Add milk and cream; stir well over low heat.

7Do not boil or soup will curdle.

8Add parsley and serve!
