- 20 or 30 small new potatoes
- 1/2 c. unsalted butter
- 2 Tbsp. minced fresh parsley
- 2 Tbsp. minced shallots
- 1 Tbsp. minced chervil
- 2 minced cloves garlic
- salt and pepper to taste
Directions

1Scrub potatoes; do not peel.

2Cook in boiling salted water for 10 minutes; drain.

3Melt butter in a saucepan, large enough to hold potatoes.

4Add the herbs, garlic and shallots.

5Add the partially-cooked potatoes and shake the pan to coat them with the herb mixture.

6Sprinkle lightly with salt, cover and cook over medium heat, shaking pan occasionally so potatoes won't stick, about 20 minutes more.

7Serve hot with ground pepper.

8Serves 6 to 8 people.
