- 1 lb. fresh spinach
- 2 Tbsp. peanut oil
- 2 Tbsp. soy sauce
- 1/2 tsp. sugar
- 2 Tbsp. finely chopped onion
- 1 (8 oz.) can water chestnuts, drained and sliced
Directions

1Wash and pat spinach leaves dry.

2Tear into bite size pieces. In large saucepan, simmer spinach with a small amount of water for 3 minutes.

3Drain thoroughly.

4Heat oil, soy sauce and sugar in a skillet.

5Add spinach and onion.

6Cook and toss until spinach is well coated, 2 to 3 minutes.

7Stir in water chestnuts.

8Makes 4 servings.
