Ingredients

  • 1 lb. mixed beans
  • 1 large onion, chopped
  • 1 chopped red pepper or 1 tsp. chili powder
  • 1 clove garlic
  • ham bone or ham hocks
  • 1 large (28 oz.) can tomatoes
  • juice of 1 lemon
  • salt and pepper

Directions

    Wash mixed beans and put in large kettle.

    Cover with water and place in refrigerator overnight.

    In the morning, add 2 quarts water and ham bone.
  4. 4
    Bring to a boil and simmer for 2 hours.

    Add onion, tomatoes, pepper, lemon juice and garlic.

    Salt and pepper to taste.

    Simmer 30 minutes more.

    Remove meat from bone and return to soup.

    Enjoy.

    The longer simmered. the better it gets.
