  • 1 lb. Ricotta cheese
  • 1 (10 oz.) pkg. spinach, cooked and drained
  • 1 c. shredded Mozzarella
  • 3 eggs, beaten
  • 2 Tbsp. oil
  • 1 tsp. onion salt
  • salt and pepper
  • 1/2 c. green pepper and 1/2 c. zucchini, sauteed (optional)

Directions

    Combine all ingredients in an oiled pie plate or spring-form pan. Dot with butter.

    Bake at 350° for 35 to 40 minutes.
