  • 2 Tbsp. oil
  • 2 medium onions, chopped
  • 1 clove garlic, crushed
  • 5 medium carrots
  • 2 stalks celery, cut

  • 1 1/2 c. stock
  • 1/2 c. red wine or cider
  • 1 tsp. thyme
  • 1 Tbsp. parsley
  • 1 bay leaf
  • 3 medium apples
  • 1 c. quartered mushrooms
  • 1 Tbsp. brown sugar

Directions
