- 1 teaspoon chopped garlic
- 3 teaspoons sugar
- 1 fresh lime
- 2 tablespoons fish sauce (nuoc mam)
- 3 tablespoons water
Directions

1Stem the chile.

2Split the chile in half, remove and discard the seeds and membrane.

3Finely chop the chile.

4Combine the chopped chile, garlic and sugar in a mortar.

5Pound the mixture into a paste.

6Remove the zest and pith from the lime, and discard.

7Add the lime to the chile mixture.

8Mash well.
-
9Add the fish sauce and the water.

10Mix well.
-
11Serve as a seasoning agent instead of salt and pepper.
