Nutted Wild Rice Salad

Ingredients
- 1 c. raw wild rice
- 5 1/2 c. chicken stock
- 1/4 c. chopped mint
- 1 c. pecans, chopped
- 4 scallions, chopped
- 1 c. mandarin oranges (canned), cut in half
- 1/4 c. olive oil
- 1/3 c. orange juice
- 1 1/2 tsp. salt
- pepper to taste
Directions

1Cook rice in chicken stock.

2Boil, then simmer, uncovered, for 45 minutes. Drain and dry.

3Chop mint, pecans, onions and mandarin oranges.

4Mix olive oil, orange juice, salt and pepper.

5Add all ingredients to a bowl and mix.

6Refrigerate at least 2 hours.
