Nutted Wild Rice Salad

Ingredients

  • 1 c. raw wild rice
  • 5 1/2 c. chicken stock
  • 1/4 c. chopped mint
  • 1 c. pecans, chopped
  • 4 scallions, chopped
  • 1 c. mandarin oranges (canned), cut in half
  • 1/4 c. olive oil
  • 1/3 c. orange juice
  • 1 1/2 tsp. salt
  • pepper to taste

Directions

    Cook rice in chicken stock.

    Boil, then simmer, uncovered, for 45 minutes. Drain and dry.

    Chop mint, pecans, onions and mandarin oranges.

    Mix olive oil, orange juice, salt and pepper.

    Add all ingredients to a bowl and mix.

    Refrigerate at least 2 hours.
