  • 1 (14-ounce) can fat-free, less-sodium chicken broth
  • 2 tablespoons light stick butter
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup uncooked basmati rice
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup chopped fresh parsley

    Bring first 4 ingredients to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 18 minutes or until rice is tender and liquid is absorbed. Remove from heat; let stand, covered, 5 minutes. Add walnuts and parsley, and fluff with a fork.
