- 2 egg whites (at room temperature)
- 1/8 tsp. salt
- 1/2 c. sugar
- 1/2 tsp. vanilla extract
- 1 c. flaked coconut
- 1/2 c. pecans, chopped finely
Directions

1Preheat oven to 350°. Combine egg whites and salt in a large mixer bowl.

2Beat at medium speed until foamy. Add sugar gradually, beating at high speed until very stiff peaks form. Blend in vanilla. Fold in coconut and pecans gently.

3Drop by teaspoonfuls onto cookie sheets lined with baking parchment.

4Bake for 15 to 20 minutes or until light brown. Remove to wire racks to cool completely.

5Yields 1 1/2 dozen.
