- 1 c. quick cooking oats
- 1 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 2 eggs, lightly beaten
- 1 1/2 c. milk
- 1/4 c. vegetable oil
- 1 tsp. lemon juice
Directions

1Combine oats, flour, sugar, baking powder and salt in mixing bowl.

2Make a well in center.

3Combine eggs, milk, oil and lemon juice.

4Pour into well and stir just until moistened.

5Pour batter by 1/4 cupfuls onto a lightly greased hot griddle.

6Turn when bubbles form on top of pancakes.

7Cook until second side is golden brown.
