  • 1 cup water
  • 34 cup oats
  • 3 tablespoons butter
  • 1 14 cups flour
  • 1 tablespoon sugar
  • 1 12 teaspoons baking powder
  • 12 teaspoon baking soda
  • 12 teaspoon salt
  • 2 large eggs
  • 1 -1 12 cup buttermilk
  • 14 cup butter, melted
  • icing sugar
  • fresh fruit (optional)

Directions

    In a saucepan, bring water to boil.

    Add oats and cook, while stirring, for 3 minutes.

    Remove from the heat.

    Add butter and mix until melted.

    Let cool.

    In a large bowl, sift flour, sugar, baking powder, baking soda and salt.

    In another bowl, mix eggs and buttermilk.

    Add to the oat mixture that is cold.

    Add egg mixture to dry ingredients and stir until its homogeneous, without stirring too much.

    (If the dough is too thick, you can add a little bit more buttermilk)

    Preheat your waffle pan and brush the pan with melted butter.

    While following the instructions of the manufacturer, pour a little bit of dough on the pan and cook for about 4 minutes or until golden.
