Ingredients

  • 1 c. Quick oats
  • 1 stick butter
  • 1 1/4 c. boiling water
  • 1 c. sugar
  • 2 beaten eggs
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1 c. brown sugar
  • 1 1/2 c. regular flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 6 Tbsp. butter
  • 1/2 c. sugar
  • 1/4 can evaporated milk
  • 1 1/2 tsp. vanilla
  • 1 c. pecans
  • 1 c. coconut

Directions

    Mix the first 3 ingredients together and let stand a full 20 minutes.

    Combine the next 9 ingredients with oatmeal mixture. Bake in a 9 x 13-inch pan at 325° for 35 minutes.

    While cake is baking, combine butter, sugar, milk and vanilla.

    Combine in saucepan over medium heat.

    Beat until butter melts and sugar dissolves.

    Add 1 cup pecans and 1 cup coconut.

    Spread over cake. Put back into oven until coconut browns slightly.
