- 1 c. quick oats
- 1 1/4 c. boiling water
- 1/2 c. shortening
- 1 c. brown sugar, packed
- 1 1/2 c. white sugar
- 2 eggs
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1/2 c. nuts (optional)
- 1 tsp. vanilla
Directions

1Pour boiling water over oats and let stand until cool.

2Blend shortening, sugar and eggs. Add oats and mix well.

3Add dry ingredients and mix well. Add vanilla and nuts.

4Pour into a 9 x 12-inch pan. Bake at 350° for 30 to 40 minutes.
