- 2 1/2 c. quick oats
- 1/2 c. brown sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. blueberries (fresh or frozen)
- 2/3 c. skim milk
- 3 Tbsp. vegetable oil
- 2 egg whites, slightly beaten
Directions

1Blend oats in blender or food processor 1 minute.

2Combine ground oats, sugar, baking powder, salt and cinnamon.

3Add blueberries, milk, oil and egg whites.

4Mix until dry ingredients are moistened.

5Fill lined muffin cups almost full.

6Bake 20 to 22 minutes at 400°.

7Makes 1 dozen.
