- 1 1/2 c. rolled oats
- 1/2 c. sifted all-purpose flour
- 1/4 c. firmly packed light brown sugar
- 1/2 tsp. ground cinnamon
- 1/8 tsp. salt
- 1/2 c. unsalted margarine
- 1 1/2 Tbsp. maple syrup
- 1/2 tsp. vanilla extract
Directions

1Heat oven to 375°.

2Lightly grease 2 baking sheets; set aside. In a medium bowl mix first 5 ingredients; set aside.

3In a small saucepan or skillet melt margarine over moderate heat.

4Add margarine, maple syrup and vanilla to dry ingredients; mix well. Drop dough by tablespoonfuls onto baking sheets, spacing cookies about 2 inches apart.

5Pat each cookie down lightly to form 1/2 inch thick rounds.

6Bake for 8 minutes or until lightly browned. Remove cookies from oven and let harden on baking sheets for 2 minutes before transferring to wire racks to cool.
