- 2 c. finely chopped raw okra
- 1/4 c. finely chopped onion
- 1 egg
- 1 Tbsp. flour
- 3 Tbsp. corn meal
- 1/2 tsp. salt or to taste
- 1/4 tsp. black pepper
- 1/2 c. cooking oil or bacon drippings
Directions

1Combine okra, onion, flour, cornmeal, salt and pepper.

2Beat egg slightly and add to okra mixture.

3Mix well.

4Heat cooking oil in skillet (I use safflower oil).

5Drop okra from a tablespoon in hot oil.

6Flatten with a pancake turner.

7Cook about 3 minutes on each side.

8Drain on paper towels.

9Serves 6.
