Old Fashioned Barley Pudding

Ingredients
- 2/3 cup pearl barley
- 3 cups boiling water
- 1 teaspoon salt
- 1 1/3 cups milk
- 1/8 teaspoon salt
- 1/4 cup brown sugar
- 1 tablespoon butter or 1 tablespoon margarine
- 1 teaspoon vanilla
- 2 eggs, lightly beaten
- 1/2 teaspoon grated lemon rind
- 1 teaspoon lemon juice
- 1/3 cup raisins
Directions

1Boil water and add barley and salt.

2Cook slowly for 45 minutes or until barley is tender.

3Cool.

4Combine milk, salt, sugar, butter, vanilla and eggs and beat well.

5Then add cooked barley, raisins, lemon rind and juice.

6Turn into a well-greased 1 1/2 quart baking pan.

7Set pan into a larger baking pan in oven.

8Pour hot water into the larger pan to within an inch of the top of the custard.

9Bake at 325 degrees, for about 1 hour until a knife inserted in the center comes out clean.

10Serve hot or cold.
