- 1 cup sifted flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 cup yellow cornmeal
- 1 cup milk
- 2 eggs, beaten
- 1/4 cup honey
- maple syrup
- 1/4 cup butter
- bacon drippings, melted
Directions

1Preheat the oven to 425F.

2Sift together the flour, baking powder and salt.

3Add the cornmeal and stir until well mixed.

4In another bowl combine the milk, eggs, honey or maple syrup, and the butter or bacon drippings.

5Add the liquids to the dry ingredients and stir just until all is moistened.

6Pour the batter into an oiled 8-inch square baking pan and bake approximately 20 minutes or until done in the center and lightly browned.

7To test for doneness, insert a toothpick or cake tester in the center.

8If it comes out dry, the corn bread is done.
