Old Fashioned Molasses Cookies

Ingredients
- 1 1/2 c. sugar
- 1 scant c. lard or other shortening
- 3/4 c. molasses
- 2 eggs
- 6 c. flour
- 1 tsp. ginger
- 1/2 tsp. salt
- 2 tsp. baking soda, dissolved in 2/3 c. hot coffee (instant coffee is fine)
Directions

1Cream together in a large bowl the sugar, lard or other shortening, molasses and eggs.

2Sift the flour, ginger and salt. Dissolve the baking soda in the coffee.

3Stir dry ingredients into molasses mixture, adding coffee alternately.

4Chill.

5Roll out dough to a thick layer, 1/2-inch or so.

6Cut with round cutter. Dip into sugar.

7Place on greased baking sheet, leaving room to spread.

8Bake at 375° for about 10 minutes but do not let brown as they will be too hard.

9They are a good big soft cookie which keep well. Cool on rack and enjoy with a glass of milk.
