Old Fashioned Rice Pudding

  • 1 pt. water
  • 1 c. long cooking rice
  • 1/2 tsp. salt
  • 1/2 c. sugar
  • 1 qt. milk
  • 1 egg
  • 1 tsp. vanilla

    Combine water, rice and salt.

    Bring to a boil.

    Turn down heat; simmer for 15 minutes.

    Add sugar and milk.

    On medium heat, bring to a boil.

    Turn off heat.

    Stir in egg, beating quickly. Add vanilla.

    Cover and refrigerate until cool.

    Serve with nutmeg.

    If you need pudding to set more quickly, cut the milk down to 3 to 3 1/2 cups.
