Old Fashioned Rice Pudding

- 4 c. milk
- 1/2 c. regular long grain rice
- 1/3 c. sugar
- 1/4 tsp. salt
- 2 eggs
- 1 tsp. vanilla extract
Directions

1In a 4-quart saucepan, heat the first 4 ingredients until boiling.

2Reduce heat; simmer, covered, until rice is tender, stirring occasionally (45 minutes to 1 hour).

3In small bowl, beat the eggs slightly; stir in small amount of hot rice mixture. Slowly pour egg mixture back into rice mixture, stirring rapidly to prevent lumping.

4Cook, stirring constantly, until thickened, about 5 minutes (do not boil).

5Remove from heat.

6Stir in the vanilla extract.

7Cool in refrigerator until chilled, about 2 hours.

8Serves 6.
